Day 5
I'm so tired today - not good sleep, can't wait for the baby to sleep in her own room at night!
Breakfast - coffee, leftover kabobs
Lunch - steak salad
I'm so exhausted I honestly have SO MUCH cleaning to do and absolutely can't tear myself off of the couch - maybe tomorrow?
On a higher note I prepped tonight's dinner. Not so sure how it'll turn out - was WAY too much prep work for a dinner though, so I doubt will make it into the regular rotation. I think maybe if I didn't use fresh herbs and seasoning it would have been faster.
Also - have to cook the green onion, sweet potato and kale in a pan first and honestly the kale and onion just burnt to the pan :(
Also how the hell do you chop kale into tiny pieces? using the magic bullet is how - but then when you know its cooked by wilted leaves doesn't work? well it just burns..so far unimpressed - especially considering it needs to chill in the fridge for 4 hours so I had to prepare it at lunch :(

Also - I just used ground chicken rather then a food processor - I'm absolutely sure I'd end up loosing my breakfast if I had to watch that!
Day 4
Oh man I'm behind again!
I was so very very busy yesterday I had zero chance to get to the computer. We had grandma come over to watch the girls while we cleaned out a corner of the basement, moved Matt's office to the basement and moved my older daughters bedroom into the old office so the girls can each have their own rooms and maybe, potentially SLEEP!
Anywho lets get down to this food buisness!
BreakFast - 2 scrambled eggs, 1/2 an apple, coffee
Lunch- leftover taco salad
Dinner - Beef shishkabobs with sweet potato fries!
Now theres a story here - our BBQ is currently in the backyard surrounded by weeds...I'm talking I'd have to weed whack my way just to get to it..but I put on my big girl panties and just did it. (I'm new to BBQing - only done it once before and that was last week!) So I climbed through the weeds, got it started, looked down and SPIDERS EVERYWHERE! I grabbed my plate of kabobs and RAN into the house screaming like a little girl - getting meat juice all over the place!
I was seriously not going to go back out there and had no idea how I was going to cook dinner...eventually I balanced the kabobs on a dish and in the oven at 400 for 15 minutes and it cooked them pretty well.
the fries never went crispy - the ends were starting to burn so I absolutely had to take them out - they were damn delicious though!
Even though things never seem to follow the recipe they are slowly getting tastier!

I *almost* forgot to take a picture, so after Husband had taken a kabob - older daughter had taken a bob and so had I, I remembered and scrambled to take it!
They were delicious!

Day 3 Dinner!
OK so dinner went well!
I went to go make lettuce wrap tacos! Turned into a bit of a taco salad instead. I made some guacamole - 3 ripe smallish avocados, 1 tomato, 1/2 an onion, 1 tiny thing of garlic, a quick squirt of lime juice and into the magic bullet! (I saved 1/2 the tomato to just cut into chunks and add though because I didn't want them all pureed)
Sauteed some yellow, green and red peppers and some onions, browned some extra lean ground beef added some canned diced tomatoes and some taco seasoning (PC blue packet, no sugar!)
Then I put it all on some iceberg lettuce
wrapped it up and...
it fell apart...so I grabbed a fork and I devoured it..and another and it was absolutely delicious!!!!
AND I'm actually quite full! Yay!!!
Day 3
OK ITS A NEW DAY GET BACK ON THE WAGON!
OK seriously now i know the laundry room supply of peach rings is gone time to get serious!
Breakfast: as I'm making my coffee I decide to see if a friend wants to come with me and the kids to an amusement park. I mean hey - it practicall guarantees a nap out of the big kid so why not?!
So I have my coffee, eat the remaining 2 omelet muffins from yesterday, cut up some fruit and head out. Snack demon averted for this morning! :)
Lunch: SALAD! I'm back on track baby lets throw together a salad! the avocado is so very ripe, the yellow, red and green peppers rock, a handful of spinach a buttload of blueberries, some more lemon/vinegar canned tuna and some slivered almonds! I even filled my water to make myself start drinking it!
SUCCESS! lunch is a good choice!
Kids are in bed and that effing snack bug is back! and I KNOW where some baking chocolate melting things are...and I eat a handful! :( seriously woman get a grip!
then I decide I obviously need to write this all down so people can scold me and maybe scare me into behaving and here I am!
Thinking chicken tacos for dinner - will update!
Day 2
woke up STARVING MY FACE OFF
but determined not to fall off the wagon again..
Breakfast:
Coffee, 2 scrambled eggs and a banana
My husband was out the door running errands and I asked if he wanted me to make him anything to eat for when he got back. He did so I decided to tackle an idea I'd read about - omelet muffins.
Basically I took 8 eggs, beat them with a whisk, chopped up some veggies and tossed them in the eggs. (I used green, yellow and red peppers and avocado - I bet it would be DELICIOUS with some meat but I didn't have any cooked and was feeling lazy)
poured these into cupcake liners in a cupcake tin - filled the empty slots with some water so they wouldn't..I don't even know this is just what you do. and chucked them in the oven at 350 for 22 minutes..
voila! omelet muffins!
My dad came by and I gave him a couple, and threw the rest in the fridge. I got all distracted with dishes and child care and all of that fun stuff I fed my daughter and forgot about making my daily salad. I ate 2 of my cupcake omelet things and then I had to run out to do some errands.
I was at sobey's looking to buy some apples to make apple chips and the hunger bug got me and shook me up!
I was STARVING and it took every ounce of self control to not buy a chocolate bar while I was there. Instead I found some strange gf/sugar free/dairy free..etc coconut bar. I also had a coupon for $1 off any gf pantry item...so I paid my $.49 and scarfed it down! Not so bad actually and it gave me some staying power!
Got home and decided to make some apple chips! YES that will cure my snack bug that always bites when the kids are in bed!
So i boiled 2 cups of apple juice (unsweetened NO SUGAR!) and tossed some cinnamon into it, then sliced 2 green apples super super thin and boiled them in the concoction for about 5 minutes.
Took them out and pat them dry with a towel - then I put them on a cookie sheet and in the oven at 250 for about 35 minutes (there just were NOT going crispy!) I gave up and pulled them out and my husband and daughter and I ate them with a fork - tasted like apple pie filling..so not the snack I'd hoped for (especially as it took almost 2 hours for not much of a snack!) but oh well - guess I'm not desitined to make chips!
Then it was dinner, and my husband came home with donairs (oh donairs one of my greatest weaknesses!) I ate mine without the pita wrap, just the meat with a teeny bit of sweet sauce and hot sauce.
Then after the kids were in bed - guess who? thats right snack bug :(
and I'm ashamed to say I didn't just fall off the wagon, I leaped with open arms, face first off the wagon! I tackled my hidden laundry room candy supply and depleted it!
Went to bed feeling like a failure!
Day 1
Ok I have some catching up to do but here's my attempts
9:00am - I'm broken, this is too crazy. I can't give up the coffee (only slept 4 hours! C'mon!) Decide that somethings gotta give and I'm not going to be able to do this without a cheat. Coffee is my cheat.
ok so coffee is down. Off to a playdate need to eat something quick - grab a banana and go.
11:30 I'M STARVING leave playdate early and go home and make a salad
Spinach, 1/2 a banana, 1/2 an avocado, handful of blueberries, red pepper, yellow pepper, teeny tiny can of tuna sitting in lemon/vinegar.
Yum!
Feeling proud of myself! Woo!
Kids go to bed..watching tv...hmmm snack...feel like snack. this feelings NOT going away! I KNOW there are candies in the laundry room THEY'RE TALKING TO ME! I decide to have just 5 little gummy candies, just 5 - no ones perfect, its day 1...
OK...eat them, immense guilt...
then SNACK SNACK SNACK I'M HUNGRY
I can't break again!
I eat a Larabar - unexpected but actually quite good!
Ok seriously get a grip no more snacking!
Come dinner time I've been afraid of this fish on my meal plan so I decide I need to tackle that first and get it over with. Its an almond encrusted Tilapia - with sweet potatoe chips.
Ok I can do this, afterall I'm super mom watch out martha stewart theres a new domestic diva in town!
I burnt the fish and the chips were soggy and floppy...big time fail - so much so I didn't even take a picture! I doubt I'll be trying that again! on a plus my oldest daughter actually ate some of it!
I made it until about 9 pm and the SNACK bug hit me again. I had another 5 gummies (I suck I know!)
then at 10 my tummy was absolutely grumbling. I ate some strawberries and blueberries...and went to bed.
30 days of eating...who knows?
So my friend approached me with an idea that her and her husband had. To go on a crazy strict diet and loose a bunch of weight for 30 days - then after the 30 days go to Paleo...
I decided to join them, figured what the heck? I've most DEFINITELY got weight to loose!
So here are the rules!
No sugar
No Gluten
No Honey
No Beans
No Potatoes
No Peanuts
No Rice
No Grains
No Dairy
ummm I think thats all?
So here's my food blog/journel to keep me accountable - and to look back on and remember recipes and just talk about this crazy ride!
